I had been using a microwave primarily to heat stuff. But I am out of LPG for the last two weeks and that has forced me to explore various functionalities of my microwave. Believe it or not, a chai (a strong Indian tea with tea powder and milk) made in a microwave comes out better than the one made on a gas stove. It retains the aroma of tea leaves and cleaning etc is much easier. My simple chai recipe is: add half a cup of water, half a cup of milk in a microwavable container. Place it on the turn table and heat it for 3 minutes. Add tea powder and sugar to this (1 tbs each or as per your requirements) Add ginger or tea masala along with the tea leaves if you wish. Put a lid. Heat the container again for 2.5 minutes. Keep the lid for another minute. Filter the tea into a serving cup.
This morning I was in a mood for a nice hot breakfast. I was bored of eating cereal every morning for the last two weeks! I decided to try to make pohe (flattened rice) in the microwave. To my own surprise, I made decent enough pohe in the microwave. The main thing in making pohe is making the tadka -- seasoning. Take all the necessary ingredients for tadka in a microwavable bowl. In this case the main ingredients were 1 tbs oil, 1 tea spoon of turmeric, cumin seeds, mustard seeds each, 2-3 finely chopped chilies, 7-8 curry leaves, 1 finely chopped onion. Cover the bowl with a lid and heat it for 2-3 minutes on "low" heat (depending on the microwave model, you may have to figure out how to get slow heating). Stir after every minute. Separately soak pohe, add salt and lemon in it to taste. Once tadka is ready, mix the pohe with the tadka. Add cut coriander and grated coconut on the top, cover the bowl with a lid and microwave the mix for 45-50 seconds. Keep the lid for another minute and serve hot in a serving dish.
